The ingredients needed to make Healthy Pho Bo:
  1. Get Broth
  2. Get 1.5 l Beef stock (more water later)

  6. Prepare 500 g beef pieces (shin I use)
  7. Prepare 2 Garlic Cloves crushed
  8. Make ready 1 tsp sweetener
  9. Prepare Toast then add to Stock
  10. Take 2 halved onions
  11. Get 3 star anese
  12. Take 3 crushed garlic cloves
  13. Prepare 3 cloves
  14. Take 1 tsp coriander seeds
  15. Get Topping
  16. Prepare Rice noodles
  17. Prepare Cabbage (steamed)
  18. Prepare Carrot (sliced and steamed)
  19. Prepare Spinach
  20. Prepare Mint
  21. Get Spring onion diced
  22. Make ready Chilli diced
  23. Take Lime juice
Instructions to make Healthy Pho Bo:
  1. Add beef stock cube/pot to 1.5l of cold water. Then add all broth ingredients (except beef), bring to the boil. Boil it for 10 minutes scooping any Scum off the top.
  2. Add beef and simmer low until beef is cooked through. Remove the beef, blanch in cold water and pop in fridge for later.
  3. Add onions, Star anese, gloves, garlic and coriander seeds to a pan/tray and pop under the grill until toasted. Should smell amazing. Add to the stock pot and simmer for an hour. Keep removing the Scum and half way top up the water you've removed.
  4. When cooked, pour it through a muslin cloth to make sure you get a nice, fresh, clear broth. Discard the rest.
  5. Cook noodles and steam veg. Build your bowl and add broth over the top. I didn't reheat my beef as the broth warmed it up just right. Top with chilli and spring onion.
