Malabar Ari Pathiri is a traditional recipe made by the Kerala Muslims in the Malabar region. As the name suggests, this pathiri is made from rice flour and has a very soft texture. Pathiri is a soft bread made from the South Indian state of Kerala. After preparation, sometimes pathiri is soaked in coconut milk, to keep it soft and to improve the taste.
Step by Step to make Pathiri & Coriander chicken curry:
- Pathiri Preparation :
- Boil the water with salt in a wide Pan. When it reaches the boiling point, turn the flame to slow and start adding rice flour slowly stirring continuously.
- Once everything comes to almost a mass, remove from the flame and with the help of a wooden spatula, combining it to form a lump. Once its done, let it cool down a bit.. give a rest of 4-5 minutes
- Then start kneading again, while its still warm.. Keep kneading until its smooth and not sticky at all. Takes about 4-5 minutes.
- Make small equal sized balls out of the kneaded dough. Meanwhile, keep a cast iron skillet or non-stick griddle (Tawa) over medium flame to heat.
- Dust some dry rice flour on the rolling board and roll the ball carefully into a thin circular shape. Keep dusting with rice flour to prevent sticking to the board.
- Heat up a tava/griddle, preferable a cast iron one, and when it is medium hot, place a pathiri on it. After a few seconds, turn it over. Repeat this once more.
- Coriander Chicken curry Preparation :
- Grind the ingredients listed under 'to grind' in separate batches & keep aside. Heat oil in a pan and add the finely sliced onions. Cook till it becomes golden brown color. Add the set 1 ground ingredients. Cook for 2-3 minutes till the raw smell goes.
- Add set 2 (tomato & coriander paste) ground ingredients. Mix well. Cook for a few minutes (3-4 mins) till the oil starts appearing. Add salt & cleaned chicken pieces. Mix well & make sure that chicken pieces are coated well with the masala. Add ½ cup water, give it a stir. Cover & cook till the chicken is done.
Variants of pathiri include neypathiri (made with ghee), poricha pathiri (fried rather than baked), meen pathiri (stuffed with fish), and irachi pathiri. Pathiri is a classic and traditional dish of the Muslims in Kerala and also an imminent part of the Malabar cuisine.
